go check out the open concrete/waxed fermenters at Esk Valley Estate......much more rustic!!

ReplyDeleteLooks to me as if they are plunging fresh pinot noir rather than crushing grapes, I know that is how it is done in France
ReplyDeleteHi Ray - I'm prett sure they are crushing freshly picked grapes - if they were plunging the cap they'd disappear below the surface!
